Spanakopita Sausage Rolls

I love Traditional Greek Spanakopita So I am always making slight variations on this depending on what I have in my pantry. These sausage rolls can be cooked, cooled, and placed in zip lock bags in the freezer to be thawed and heated up later, I prefer to do them in the oven but they can be heated in the microwave as well.Serve them with a salad, by themselves, or with a nice sauce.

What you need:

1 packet of ready made puff pastry
500g tub of ricotta
 good handful of grated Parmesan cheese
1 packet of frozen chopped spinach
1 onion diced finely
1 tablespoon of minced garlic
1 small carrot grated
1 large egg lightly beaten
about a cup of cooked jasmine rice
pinch of nutmeg
2 teaspoons dill
2 teaspoons lemon juice
salt and pepper to taste
finely chopped parsley about 3 tablespoons
Egg wash ( 1 lightly beaten egg and 2 tablespoons of cold water )

What to do:

1. I a frying pan with a little olive oil, lightly saute the onion, carrot,spinach, garlic. I basically do this to dry out the spinach as well as cook off the garlic and soften the onion. mix in the cooked rice. Set aside to cool
2. To the cooled spinach mixture add the ricotta, parmesan cheese,dill, nutmeg, lemon juice, salt, pepper, parsley and mix well,  then add the lightly beaten egg, and mix well.
3. Take a sheet of puff pastry and cut in half, using a pastry brush dab around the edges of one half with egg wash. Along one side pipe or place mixture. The roll over. to make a log. then cut each log int 3-4 party sausage rolls. Brush with egg wash.
4. Line a baking tray with bake paper and lightly spray with olive oil bake at 200 fan forced oven . when golden brown on one side flip over baste again with egg wash and continue to bake until golden brown.
