Parmesan,yoghurt chicken tenders with beans and spinach

One of those weeks where there is very little in the kitchen and I was starving, normally I don't eat packet frozen products but will admit to keeping a couple boxes of Inghams chicken tenders in the freezer and tinned stuff in the pantry is a must, so this is what I came up with for today's lunch and dinner ,and I have to say it was pretty tasty.

What you need:

4-5 heaped tablespoons greek yoghurt
1 cup grated parmesan cheese
1 tablespoon minced garlic
1 box Inghams frozen crumbed chicken tenders ( I used sweet chilli ones for this)
1x frozen packet of spinach
1x tin of mixed beans
salt,pepper
1 nob of butter, about a tablespoon ( unsalted)
A squeeze of parsley and coriander ( I used gourmet garden ) they come in handy and they are in the frest food section at coles

What to do:

1.cook chicken tenders for about 20 minutes or until thawed and heated through in a fan forced oven at 185 degrees.
2.mix yoghurt, parmesan cheese and minced garlic together, place a generous amount on the chicken tenders and a good grinding of pepper, return to oven and cook for a further 15 minutes or until topping starts to brown.
3.Cook frozen spinach in the microwave for about 4 minutes.
4.In a non stick pan and butter beans fry for a few minutes, add spinach, parsley, coriander, lemon juice and a good grinding of pepper, cook for a few minutes .
5.Place beans on a plate and top with chicken tenders.
and yum there dinner.
